Steak Salad

Here is my recipe for a steak salad. Be sure and get a nice lean steak that is evenly cut and the freshest greens you can. Pairs well with a Tempranillo.

Ingredients:

Steak
Salad (Romaine, Red Leaf, etc)
Spinach (fresh)
Basil (fresh)
Cherry tomatoes
Goat cheese
Balsamic olive oil
Vinegar
Kosher salt and fresh ground pepper

Basics: Prepare a simple salad with fresh greens and basil. Sprinkle liberally with olive oil, vinegar. Add a little salt and pepper and toss. Be sure your greens are crisp and cut into small bite-sized pieces. Cover and stick in the fridge.

In a glass or ceramic oven pan, spread a layer of the spinach. Cover with cherry tomatoes cut in half. Sprinkle with goat cheese on top. Drizzle olvie oil, vinegar, and red wine over the mixture. Pre-heat oven to 400' and cook for about 10 minutes.

While that's cooking, sear your steak on both sides in an iron skillet (or grill). Remove from heat and slice into nice pieces. If using a skillet add pieces back to pan and cook at the last moments of the dish.

Plating: First layer should be cold fresh greens. Next layer is cooked spinach, tomatoes and cheese. Top layer is the steak! Serve with red wine and enjoy.
